Falafel recipe inspired from our travels

Our visit to the Barker Tea House in Cardiff, Wales, inspired this recipe. One of our lunch items during our visit was Bloomer with Falafel.

We’ve already recreated and shared our recipe for Bloomer Bread. This falafel is a tasty and healthy version of your normal falafel that goes great on bloomer bread or bread of your choice.

Vegan-friendly falafel

This is an easy, homemade, vegan, and vegetarian-friendly recipe that is easy to make.

We keep this simple for our main ingredient, using canned garbanzo beans. If you have time and prefer to go old school, you can cook up your beans from dried chickpeas.

Baked Falafel Sandwich Recipe

Baked Falafel Sandwich Recipe

Total Time 25 minutes

Ingredients

  • 1 15 oz. can garbanzo beans, drained and rinsed
  • ¼ cup chopped onion
  • ½ cup parsley, lightly packed
  • ½ cup cilantro, lightly packed
  • 3 cloves garlic
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons lemon juice
  • ¾ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • Pinch of cayenne pepper
  • 1 tablespoon flaxseed
  • ½ teaspoon baking soda
  • 2 tablespoons flour

Instructions

    Preheat oven to 350°F. Line a baking sheet with parchment paper.

    Add the garbanzo beans, onions, parsley and cilantro to a food processor. Also add garlic, olive oil, lemon juice, flaxseed and spices. Pulse until just combined (just a bit chunky is fine). Do not over-process so as to avoid a hummus texture.

    Stir in the baking soda and flour.

    Scoop the mixture out by spoonfuls and form small patties. Place on the parchment paper.

    Bake 12-15 minutes. Flip the patties and bake another 12-15 minutes. Falafel patties should be golden brown and well cooked through.

FALAFEL DRESSING
The following dressing recipe is a nice accompaniment for the falafel.

INGREDIENTS FOR FALAFEL DRESSING
¼ cup tahini
Juice of 1 small lemon
1 garlic clove, pressed or finely chopped
2 tablespoons dill, cilantro, or parsley chopped
Pinch of cayenne pepper
1/4 to 1/33 cup water
Pinch of salt

DIRECTIONS FOR FALAFEL DRESSING
Combine all of the ingredients in a small bowl. Start with ¼ cup water. Add just a bit more if needed. Mix until well combined. Serve with falafel.

Serving Recommendation for Baked Falafel Sandwich

Could you serve the baked falafel on bread? You can try homemade bread like our Bloomer Bread recipe. Alternatively, a nice brown bread works well too. Add a tahini sauce and a slice of tomato – and you have a nice lunch sandwich. Serve the baked falafel sandwiches either open-faced or between two pieces of bread.

The baked falafel would also work great in warm pita bread.
