Dunster Castle Veggie Wrap
On a summer day in Dunster, we explored the local beach during the morning hours. We enjoyed the local seaside very much. After strolling the beach, we arrived back to Dunster village just in time for lunch. Walking up the main road, we noticed that the Dunster Castle Hotel was open for lunch. So, we decided to try a meal at this location. And this meal turns out to be the inspiration for this recipe – the Dunster Castle Veggie Wrap.
The menu described several wrap options. Being non meat eaters, we chose their vegetarian offering. The menu noted this would be prepared with roasted mixed peppers, homemade hummus, spinach, tomato, and drizzled with a hoisin sauce. The lunch wraps were offered with coleslaw and crisps.
It was nice to try a new location for dining during our short stay in Dunster. This meal hit the spot for lunch. It was not heavy at all and a nice proportion.
Let’s take a look next at making this veggie wrap. We present the recipe in three sections. First, we made our own Hoisin sauce. Next, we made our own hummus. Finally, we assemble the wrap. While there are several steps involved, you can prepare this in about 10 to 15 minutes. If you will be making homemade roasted bell peppers, be sure to start this step first.
INGREDIENTS FOR HOISIN SAUCE
3 Tablespoons molasses
1 Tablespoon soy sauce
1 Tablespoon almond or peanut butter
1 Tablespoon white wine vinegar
1/4 teaspoon garlic powder
Dash hot sauce
3/4 teaspoon cornstarch
DIRECTIONS FOR HOISIN SAUCE
Combine all of the ingredients except the cornstarch in a small saucepan. Heat over a medium heat to dissolve the molasses and nut butter. Watch the flame and heat so as to not burn the mixture.
In a small bowl, mix the cornstarch with an equal amount of water. Stir to dissolve the cornstarch.
Whisk the cornstarch mixture into the saucepan with the heated ingredients. Simmer the mixture until it begins to thicken. Then remove the mixture from the heat.
INGREDIENTS FOR HUMMUS
1 15 ounce can of garbanzo beans, drained (reserve liquid)
Lemon juice from one lemon
3 tablespoons tahini
1 small garlic clove, minced
2 tablespoons olive oil
1/2 teaspoon ground cumin
Salt to taste
3 to 4 tablespoons water or liquid from the Garbanzo beans
DIRECTIONS FOR HUMMUS
Place all ingredients in a food processor. Blend until smooth and creamy – about 1 to 2 minutes. Add more liquid as needed.
INGREDIENTS FOR WRAP
Large tortillas
Hummus (Homemade or store bought)
Roasted peppers (Home roasted or store bought)
Tomatos, chopped
Baby spinach
Hoisin sauce (Homemade or store bought)
DIRECTIONS TO ASSEMBLE WRAP
Lightly heat the tortillas. Spread about 2 tablespoons of hummus on the tortilla. Add chopped tomatoes and sliced roasted bell peppers across each tortilla. Top with a spinach leaves. Drizzle with the Hoisin sauce. Wrap the tortillas and enjoy.
SERVING RECOMMENDATION
Serve with a coleslaw and chips if desired.
