On a summer day in Dunster, we explored the local beach during the morning hours. We enjoyed the local seaside very much. After strolling Dunster Beach, we arrived just in time for lunch at Dunster Village. Walking up the main road, we noticed that the Dunster Castle Hotel was open for lunch. So, we decided to try a meal at this location. And this meal is the inspiration for this recipe – the Dunster Castle Hummus Veggie Wrap.

It was nice to try a new location for dining during our short stay in Dunster. This meal hit the spot for lunch. It was not heavy at all and a nice proportion.

Dunster Castle Veggie Wrap Recreation

This recipe recreates a veggie hummus wrap we enjoyed at Dunster Castle in Somerset. This wrap is prepared with roasted mixed peppers, homemade hummus, spinach, and tomato and drizzled with a hoisin sauce.

Ingredients

  • INGREDIENTS FOR HOISIN SAUCE
  • 3 Tablespoons molasses
  • 1 Tablespoon soy sauce
  • 1 Tablespoon almond or peanut butter
  • 1 Tablespoon white wine vinegar
  • 1/4 teaspoon garlic powder
  • Dash hot sauce
  • 3/4 teaspoon cornstarch
  • INGREDIENTS FOR HUMMUS
  • 1 15 ounce can of garbanzo beans, drained (reserve liquid)
  • Lemon juice from one lemon
  • 3 tablespoons tahini
  • 1 small garlic clove, minced
  • 2 tablespoons olive oil
  • 1/2 teaspoon ground cumin
  • Salt to taste
  • 3 to 4 tablespoons water or liquid from the Garbanzo beans
  • INGREDIENTS FOR WRAP
  • Large tortillas
  • Hummus (Homemade or store bought)
  • Roasted peppers (Home roasted or store bought)
  • Tomatos, chopped
  • Baby spinach
  • Hoisin sauce (Homemade or store bought)

Instructions

    1. Lightly heat the tortillas.
    2. Spread about 2 tablespoons of hummus on the tortilla.
    3. Add chopped tomatoes and sliced roasted bell peppers across each tortilla.
    4. Top with a spinach leaves.
    5. Drizzle with the Hoisin sauce.
    6. Wrap the tortillas and enjoy.
    7. Serve with a coleslaw and chips if desired.

Additional Ideas For Your Hummus Veggie Wrap

Feel free to embellish the wrap with your favorite vegetables. You can add red onions, green onions, feta cheese or goat cheese, red peppers, and leafy greens.
