Recreating Recipes From Our Travels

After returning home from our UK trip, we set out to recreate many of the foods we enjoyed.  One of the meal accompaniments we enjoyed in the UK was classic English chips. We enjoyed such chips with curries and of course with fish. Making this at home reminds us of traveling in the UK, especially when we put some malt vinegar on these yummy potato treats.

This recipe is for homemade English oven potato chips. It is our take on classic English chips. Serve with Malted Vinegar for a traditional chips experience alongside battered fish, curry, or your favorite burger.

Cook Time 30 minutes
Total Time 1 hour

Ingredients

  • 2-4 medium russet potatoes
  • 1 tablespoon lemon juice
  • Salt
  • Garlic powder (optional)
  • 2-3 Tbs. Cooking oil

Instructions

    1. Preheat oven to 400° Fahrenheit
    2. Wash potatoes thoroughly using a vegetable scrubber. Do not peel.
    3. Place potatoes on a cutting board and slice each side of the potato so that each side is flat, keeping most of the skin on. Cut off a small section of the top and bottom of each potato. Slice the potato down the middle, turn to the side, and slice down the middle again, leaving four large sections of potato—place in cold water with about a tablespoon of lemon juice to keep it from browning. Keep in the water for about 20 minutes.
    4. In a large skillet, place cooking oil and heat till hot but not smoking. Take out the potatoes and, place them on paper towels, pat to dry. When the oil is hot, place the potatoes in oil and cook on each side until browned.
    5. Next, place the browned potatoes on a cookie sheet and season to taste.
    6. Put the sheet of potatoes into your oven to bake for 15 to 20 minutes.

Serve these oven baked potato chips as a side with curry or fish for a classic English experience.

Place the homemade baked potato chips on a serving dish and place Malted Vinegar on the table for those that wish to enjoy an English chips experience.
