Ingredients

  • INGREDIENTS FOR SALMON AND SCRAMBLED EGG MUFFIN
  • 2 English muffins
  • 4 eggs
  • 2 tablespoons milk
  • 1 tablespoon oil or butter
  • 3 ounces smoked salmon
  • Salt and pepper
  • 1/2 cup Baby spinach
  • INGREDIENTS FOR LEMON DILL DRESSING
  • ¼ cup lemon juice (from about 2 medium lemons)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1 clove garlic, finely minced
  • Salt and pepper to taste
  • ½ cup olive or sunflower oil
  • 1 ½ tablespoons fresh dill, finely chopped

Instructions

Prepare the Lemon Dill Dressing:

  1. Mix the Base: In a medium bowl, whisk together the lemon juice, Dijon mustard, honey, minced garlic, and a pinch each of salt and pepper.
  2. Emulsify the Dressing: Slowly drizzle in the olive or sunflower oil while continuing to whisk until the mixture thickens and is well incorporated.
  3. Add Herbs: Stir in the fresh dill. Set aside. (Note, you may have leftover dressing if just making the recipe for two people)

Prepare the Spinach:
Toss about ½ cup of baby spinach in just enough dressing to coat. Set aside for garnishing the muffins. Keep any leftover dressing refrigerated and use within 3 days.

Make the Salmon and Scrambled Egg Muffins:

  1. Toast the Muffins: Split the English muffins and toast them until golden brown.
  2. Scramble the Eggs: In a small bowl, beat the eggs with the milk, adding a pinch of salt and pepper. In a medium nonstick or cast iron skillet, heat a thin layer of oil or butter over medium heat. Pour in the egg mixture. Use a spatula to gently pull the cooked edges towards the center, scrambling the eggs until they are softly set.
  3. Assemble the Muffins: Divide the scrambled eggs evenly among the four toasted
English muffin halves. Top with smoked salmon and dressed baby spinach to create two open-faced muffin halves per person.
  4. Garnish and Serve: Top with the dressed spinach and a drizzle of the Lemon Dill Dressing. Alternatively, place the prepared English Muffins atop the dressed spinach.
