Somerset Cream of Leek Soup
Our recipe on this post is what we call Somerset Cream of Leek soup. While vacationing in Dunster, we stopped for dinner at the Stags Head Inn Restaurant. Located just a few steps from the front door of Exmoor House B&B, it was nice to have a convenient location for dinner.
Sometimes, we enjoy a soup or salad to start a dinner meal. And we did just the very thing for this meal. Selecting a cream of leek soup that was on the menu was a nice start to a meal as we began to unwind for the day. This Somerset Cream of Leek soup recipe is inspired by our dinner starter at the Stags Head Inn Restaurant.
Here is the soup as served to us at the Stags Head Inn Restaurant.
INGREDIENTS
1 tablespoon olive oil
2 cloves garlic, minced
½ onion, sliced
2 cups leeks: Whites and light green parts only, chopped
1 potato, sliced
2 cups vegetable broth
½ teaspoon curry powder
½ teaspoon turmeric
2 ½ tablespoons flour
2 tablespoons heavy cream
¼ cup milk
DIRECTIONS
Heat oil on medium heat in a large pot. Add onions, garlic and leeks. Cook for about 10 minutes.
Add the potato, spices and broth into the pot bring to a boil. Reduce heat and simmer for 45 minutes.
Add 2 ½ tablespoons of flour and cream to the soup . Blend the soup either in batches in a blender, or in the pot with an immersion blender.
Pour back into the pot and heat to keep warm.
SERVING RECOMMENDATION
Serve Somerset Cream of Leek soup with a baguette and butter.
