Sometimes, we enjoy soup or salad to start a dinner meal. And we did just the very thing for this meal. Selecting a cream of leek soup on the menu was a nice start to a meal as we began to unwind for the day. This Somerset Cream of Leek soup recipe is inspired by our dinner starter at the Stags Head Inn Restaurant.

This Somerset Cream of Leek soup recipe is inspired by a version we enjoyed while vacationing in Dunster, England at the Stags Head Inn Restaurant.

Ingredients

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • ½ onion, sliced
  • 2 cups leeks: Whites and light green parts only, chopped
  • 1 potato, sliced
  • 2 cups vegetable broth
  • ½ teaspoon curry powder
  • ½ teaspoon turmeric
  • 2 ½ tablespoons flour
  • 2 tablespoons heavy cream
  • ¼ cup milk

Instructions

    1. Heat oil on medium heat in a large pot.  Add onions, garlic, and leeks.  Cook for about 10 minutes.
    2. Add the potato, spices, and broth into the pot and bring to a boil.  Reduce heat and simmer for 45 minutes.
    3. Add 2 ½ tablespoons of flour and cream to the soup.  Blend the soup in batches in a blender, or the pot with an immersion blender.
    4. Pour back into the pot and heat to keep warm.
