Kevin Pie Recipe – Vegetarian Pot Pie Inspired by Pieminister

Our favorite dinner stop during our Cardiff, Wales trip was at The Pieminister.  A world of reimagined British Pies is the culinary delight that greets visitors who enter through their doors.  And the pies are made by a team that aims for high standards of social and environmental impact. Our visit inspired us to devise our own Kevin Pie Recipe, which we share with readers in this post.

Pieminister Menu Options and Our Experience in Cardiff

We identified Pieminister in advance of our visit to Cardiff, Wales from TripAdvisor. And the visit did not disappoint.  Located towards the southwestern edge of the city center, the offerings include several unique savory pies, including vegetarian, vegan, and gluten-free options.  Meat lovers have many choices here too. 

We chose a menu option that provided one pie, one side, and one ice cream.  Our pie choices included the Wild Mushroom Asparagus Pie, served with a brown sauce over a vegan mash.  This was delicious. We also had the Kevin pie with chestnut mushrooms, quinoa, tomatoes, and baby onions. There is nothing quite like this in our home in Southern California. 

Pieminister provides a welcoming environment with friendly service and good value. The taste of the food was fantastic. It’s a little slice of pie heaven.

Recreating recipes from our travels

Returning home from our UK trip, we attempted to recreate many foods we enjoyed.  One of these was to create the savory pies we enjoyed at Pieminister.  We sampled two savory pies at Pieminister, one being their Kevin Pie.  

Kevin Pie Recreation Recipe

The recipe below is our homemade take on their creation.  This is pretty easy to make and a great vegetarian pot pie.  The pie crust recipe comes from a recipe posted on The Pieminister website.  The filling is our adaptation to get close to the Kevin Pie.

(Note: The quantity for the pie crust will make enough crust to top your pie. If you want to have enough crust for the sides and bottom of your pie, double the quantities above).

Kevin PIe - Vegetarian Pot Pie

Pieminister Kevin Pie

This recipe is our homemade recreation of Pieminister's Kevin Pie. This is fairly easy to make and a great vegetarian pot pie. The pie crust recipe comes from a recipe posted on The Pieminister website. The filling is our adaptation to get close to the Kevin Pie.

Cook Time 1 hour 40 minutes
Additional Time 30 minutes
Total Time 2 hours 20 minutes

Ingredients

  • INGREDIENTS FOR PIE CRUST
  • 240g all-purpose flour
  • Salt (pinch)
  • 120g butter, cut into small cubes
  • 2 1/2 tablespoons cold water
  • (Note: The quantity for the pie crust will make enough crust to top your pie. If you want to have enough crust for the sides and bottom of your pie, double the quantities above).
  • INGREDIENTS FOR KEVIN PIE FILLING
  • Ingredients for Kevin Pie Filling
  • 2 tablespoons oil
  • 18 baby onions
  • 150g cherry tomatoes
  • 2 cloves garlic
  • ½ cup dry quinoa
  • 2 tablespoons olive oil (additional to above)
  • ½ onion
  • 1 red chili
  • 2 carrots diced
  • 1 leek, sliced thin
  • 6 oz. mushrooms – oyster or similar, chopped
  • 1 bay leaf
  • 4 oz. red wine
  • 2 tablespoons tomato puree
  • Parsley
  • ½ tsp. thyme
  • ¼ tsp. salt
  • 1/8 tsp. pepper
  • 3 tablespoons sun dried tomatoes
  • 1 tablespoon nutritional yeast
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon lemon juice
  • 1 egg

Instructions

    1. DIRECTIONS FOR PIE CRUST
    2. Sift the flour into a bowl and add the salt. 
    3. Add the butter cubes and rub them into the flour with your fingertips until the mixture looks like breadcrumbs. 
    4. Gradually stir in enough cold water to make a pliable but fairly firm dough.  Knead lightly for 30 seconds until smooth, then wrap in Saran Wrap and chill for at least 30 minutes before use.
    5. DIRECTIONS FOR PIE FILLING AND BAKING
    6. Roast the tomatoes, baby onions, and garlic cloves, sprinkled with oil, salt, and pepper – for about 35 minutes, until the vegetables are tender and well colored.
    7. Cook the quinoa according to the quinoa directions.
    8. Heat oil. Cook onions and red chili until about 3-5 minutes.
    9. Add carrots and leeks and cook for about three more minutes.
    10. Add mushrooms and bay leaf. Then add wine and simmer until the wine is nearly evaporated.
    11. Chop the roasted vegetables and add to the cooking mixture.
    12. Add spices and herbs (parsley, thyme, salt, pepper).
    13. Mix tomato puree, quinoa, nutritional yeast, and sundried tomatoes into the mixture.
    14. Add balsamic vinegar, sugar, and lemon juice.
    15. Heat the oven to 350°F.
    16. Roll out half the pastry on a lightly floured surface to about 3mm thick.
    17. Fill individual pie dishes with the mixture.
    18. Top the individual pie dishes with the crust, pushing it into the corners of each one and letting it hang slightly over the edge.
    19. Brush the top of the pastry with egg.
    20. Leave to stand for about 10 minutes.
    21. Bake the pies for about 40 minutes, until well browned.

Serving Recommendation

We recommend serving with brown gravy and a side accompaniment of minted mush peas.
