What is rice pudding?

Rice pudding is a creamy, comforting dish served around the world. Made with milk, rice, and other ingredients like nuts, dried fruit, and spices, it can be enjoyed sweet or savory. In places like India and Greece, it’s considered a dessert; in Sweden and Denmark, it’s eaten as a breakfast meal! However you enjoy it, rice pudding is a delicious and satisfying treat. 

It’s also vegan-friendly when made with almond milk! So whether you’re looking for a comforting dessert or a hearty breakfast, rice pudding is the perfect dish for everyone. Top it off with your favorite nuts, dried fruits, and spices for an extra-special touch.

Choosing your non-dairy milk for this rice pudding dessert

For a vegan-friendly dessert, we’re making this rice pudding delight with almond milk. We’ll get a tremendous almond flavor and great nutty textures enhanced by some slivered almonds.  While we’ll use almond milk, you can also substitute other non-dairy substitutes such as oat and soy.

How to make rice pudding with almond milk and mint

Start by soaking the raisins in hot water for about half an hour.  They’ll be ready when they’ve swelled in size.

You’ll also want to rinse your rice under running cold water.

Pour the almond milk into a small pot.  Heat the almond milk on low heat until the milk becomes warm.  Then add the brown sugar and stir the mixture.  

Take the previously rinsed rice, and add it to the heated milk mixture.  At this point, raise the temperature of the almond milk to a near boil and then turn the heat down so that the mixture simmers.  Continue to cook until the rice forms into a thick gruel and the almond milk absorbs into the rice. This will take about 30 minutes.

Add the raisins to the cooked rice pudding.

Now we’re ready for the final step of this rice pudding with almond milk and mint dessert.  

Place a small layer of almond slices at the bottom of a dessert dish.  Add one layer of rice pudding.  Top with a middle layer of almond slices. This adds a great texture and deepens the depth of flavor you’ll get.  Add a second layer of rice pudding.  Sprinkle with nutmeg.  Add a final top layer of almond slices.  Garnish with mint leaves.

Tips for making this rice pudding with almond milk recipe

Use a short-grain white rice variety.

Be sure to rinse the rice before placing it into the pot. This will help keep the rice from becoming overly sticky during cooking.

Consider adding a tiny amount of mint extract to accentuate the flavor from the mint leaves.

Serving the rice pudding

We prefer this rice pudding dish when it’s finished cooking and is still warm. Don’t forget to garnish with mint leaves. That adds a wonderful fragrance.

Also, you can place it into the refrigerator to enjoy later or even as a breakfast meal topped with fruits.  

If you store it in the refrigerator, just be sure to consume it within a few days.

Kick it up a notch – make it a Posh Rice Pudding

Consider the recipe as a guide. You can always improvise to make it fancier.  Consider these variations:

  • Substitute another non-dairy milk for the almond milk. Choices include soy milk or oat milk.
  • Intensify the flavor by adding some vanilla to the recipe.

You may use brown rice in the recipe.  If you do so, you may need to increase the cooking time. Brown rice will provide a fuller texture. Consult the cooking instructions on your choice of rice.

What kind of sweetener should I use for rice pudding?

We use brown sugar in our recipe. You may also substitute maple syrup or honey or experiment with other sweeteners.

INGREDIENTS

2 ounces raisins
32 ounces almond milk
3 ounces brown sugar
5.5 ounces jasmine rice
5.5 ounces roasted almond thin slices
Mint leaves
Nutmeg

PREPARATION
